I have been craving salads for several months. I'm not talking about the boring salads with just lettuce, tomatoes, croûtons and dressing. I want the fancy salads that make you say "Wow, is there more of that available?"
It all started at the first of November when I was passing a kidney stone while in my 9th month of pregnancy. The Relief Society President called Levi and asked if we wanted meals to be brought in while I was down. I said "No thank you", but Levi had the phone and responded, "Yes, that would be wonderful". The next several days as I was still suffering from the kidney stone pain, my mouth was on a field trip to an exotic culinary wonderland (My pain killers may have had something to do with that). Every night we had delicious meals brought in, and the salads still stand out in my mind.
I have never been one to be adventurous with salads, only because I lack the imagination to appreciate strange things mixed with my salad greens. If only I had experimented earlier, my taste buds could have been much happier years ago.
I tried one out tonight called a Mushroom Spinach Salad that I rather enjoyed. I found it on the All Recipies.com website.
I am still searching for delicious salad recipes to try and if you have one, please make this mouth happy by sharing it with me.

I'm sad I moved before I had my baby! I want to try the ward's salads. I've been looking into salads myself...you know...baby weight and all. We'll have to share recipes.
Oh man, you hit the right cord with me! One of my favorite salads to make for lunch at work includes, avocados, sugar snap peas, tomatoes, cheese, eggs, some kind of nut (like an almond, walnut, whathaveyou), maybe some chicken, black beans, and corn, then top it all of with Bolthouse Butter Ranch dressing. *drooling* You can also add tortilla chips.
Another one I really enjoy is baby spinach, walnuts, apple chunks, craisins or dried cherries, and feta cheese topped off with a raspberry vinegrette.
Then yet another all-time favotire and ultra simple is baby spinach with strawberries and avocados topped with raspberry vinigrette. It sounds weird, but don't knock it until you've tried it. For real.
How is that for a few ideas? :)
